<p>50 minutes from start to finish</p>
<p>Makes 8 pizzas about 10cm round.</p>
<p>Dairy Free! Gluten Free!<br />
 </p>
<p>Prepare 2 biscuit trays with baking paper.</p>

<p>3 cups hot water<br />
1 tea. bouillon<br />
 <br />
Bring to the boil in a saucepan.</p>
<p>¾ cup polenta<br />
 <br />
Slowly add polenta stirring constantly.<br />
When boiling, turn to low heat, stirring until it thickens.</p>
<p>Remove from heat.</p>
<p>Place 2 heaped tablespoons of polenta onto trays and shape into level circles with a knife before it sets, doing one circle at a time.  Set aside to cool.</p>
<p><strong>FILLING</strong>:</p>
<p>Sundried tomato pesto<br />
1 red capsicum (finely chopped)<br />
1 onion (finely chopped)<br />
50 g. goats fetta (diced)<br />
Capers (drained well)</p>
<p>Optional toppings:<br />
Mushrooms (sliced)<br />
Olives<br />
Soy cheese (grated)<br />
Pineapple (finely chopped)<br />
 etc.</p>
<p>Spread pesto over bases.</p>
<p>Sprinkle other ingredients on top.</p>
<p>Cook in 180*c oven 15 to 20 minutes or until cheese is slightly browned.</p>
<p><strong>NOTE</strong>: These work best if made into small rounds rather that 1 big pizza, as the base is still flexible when cooked.</p>

<p>3 cups cooked fresh chickpeas OR 2 x cans chickpeas (drained)<br />
1 onion (finely chopped)<br />
1 red capsicum (finely chopped)<br />
3 tablespoons parsley (finely chopped)<br />
Soy ginger dressing – enough for your own liking.</p>
<p>Partially blend chickpeas in a food processor.<br />
Transfer to a bowl.<br />
Prepare other ingredients and to chickpeas.<br />
Stir well.<br />
Ready to serve.</p>
<p><strong>SOY GINGER  DRESSING:</strong>  (4 minutes)</p>
<p>2 cloves garlic (crushed)<br />
2 good teaspoons ginger (grated)<br />
Juice of ½ small lemon<br />
 <br />
Put into a 1½ cup capacity screw top bottle.</p>
<p>Cold pressed olive oil<br />
Fill bottle to 2/3 full.</p>
<p>Tamari <br />
Fill last 1/3 of bottle.</p>
<p>Shake well. <br />
Leave to stand if using shortly, otherwise store in the refrigerator.</p>
