Vegetarian Recipe – Chickpea Salad

CHICKPEA SALAD
20 minutes from start to finish, includes making dressing.
3 cups cooked fresh chickpeas OR 2 x cans chickpeas (drained)
1 onion (finely chopped)
1 red capsicum (finely chopped)
3 tablespoons parsley (finely chopped)
Soy ginger dressing – enough for your own liking.
Partially blend chickpeas in a food processor.
Transfer to a bowl.
Prepare other ingredients and to chickpeas.
Stir well.
Ready to serve.
SOY GINGER DRESSING: (4 minutes)
2 cloves garlic (crushed)
2 good teaspoons ginger (grated)
Juice of ½ small lemon
Put into a 1½ cup capacity screw top bottle.
Cold pressed olive oil
Fill bottle to 2/3 full.
Tamari
Fill last 1/3 of bottle.
Shake well.
Leave to stand if using shortly, otherwise store in the refrigerator.
