“WHAT?! Eat Your Pasta and Stay Slim too??”
No, it’s not too good to be true. Traditional pastas which are made of mostly wheat will build fat in your body if you eat too much. However, if you were to substitute wheat pastas with rice or corn pastas you and your children will be much better off. These are not fattening and are much more nutritious, look great on your plate and to be totally honest, all my guests say “You can’t tell the difference”. This is a great way of giving your family less wheat products. The healthy pasta comes in most of your favourite shapes too, even lasagne sheets.

PIZZA
50 minutes from start to finish
Makes 8 pizzas about 10cm round.
Dairy Free! Gluten Free!
Prepare 2 biscuit trays with baking paper.
BASE:
3 cups hot water
1 tea. bouillon
Bring to the boil in a saucepan.
¾ cup polenta
Slowly add polenta stirring constantly.
When boiling, turn to low heat, stirring until it thickens.
Remove from heat.
Place 2 heaped tablespoons of polenta onto trays and shape into level circles with a knife before it sets, doing one circle at a time. Set aside to cool.
FILLING:
Sundried tomato pesto
1 red capsicum (finely chopped)
1 onion (finely chopped)
50 g. goats fetta (diced)
Capers (drained well)
Optional toppings:
Mushrooms (sliced)
Olives
Soy cheese (grated)
Pineapple (finely chopped)
etc.
Spread pesto over bases.
Sprinkle other ingredients on top.
Cook in 180*c oven 15 to 20 minutes or until cheese is slightly browned.
NOTE: These work best if made into small rounds rather that 1 big pizza, as the base is still flexible when cooked.

Use soaked dates instead of sugar on gluten free cereals, and rice milk instead of cows milk. It is very yummy, healthy, gluten free and dairy free with no added bad sugars - only the natural sugar in the dates. The sugar from the dates comes out into the water and makes a beautiful syrup.
Most people eat too much wheat products, dairy and bad sugars. These foods alone in high quanties are bad for your health.
